Sweet Dairy Free Treat

Homemade ice cream is a sweet treat during those hot summer months. Those that suffer from dairy sensitivity, allergy, or are lactose intolerant are often not able to enjoy this cooling desert. Here is a recipe for strawberry ice cream that is dairy-free.
1 Can of Coconut Milk
1 lb if Strawberries
Almond Milk
1 Cup of Sugar
Ice Cream Maker
Ice
Rock Salt
Blend the strawberries and coconut milk together using a blender. Add the mixture to the ice cream maker. Fill with your choice of dairy free milk to the line. We use almond milk because the hint of almond adds to the strawberry and the milk is a little thicker which helps the texture. However, cashew, soy, and coconut milk are all acceptable substitutions. Stir in the cup of sugar (more or less can be used depending on your tastes) making sure to mix everything thoroughly. Now use the ice cream maker, ice and salt (according to the ice cream maker’s instructions) to create your delicious ice cream. Add some cut strawberries to complete the dish.
The strawberry ice cream freezes really well (unlike some homemade ice cream recipes) so make extra and save it for another hot day.
