Gluten-Free and Dairy-Free Chocolate Chip Cookies
Some notes about this recipe before you begin. In order to make gluten and dairy free, substitute appropriate flour and chocolate chips. At our household we use Domata flour (certified GF) and Ghirardelli semi sweet chocolate chips. These chocolate chips are not certified gluten and dairy free. Guittard (at the time of this posting) offers certified gluten and dairy free chocolate chips if that is needed. For the instant pudding, any flavor is useable. Feel free to experiment to achieve different tastes. Our most common selection is French Vanilla.
2 ¼ Cups of Flour — ¼ Cup Sugar
1 tsp Baking Soda¾ — Cup Brown Sugar
1 tsp Salt — 1 Box Instant Pudding
1 Cup Margarine — 2 eggs
Chocolate chips — 1 tsp Vanilla
Combine flour, baking soda, and salt in a bowl and set aside for a later step. Combine margarine, sugars, pudding, and vanilla and mix until creamy. Add eggs. Stir in flour in small batches until fully mixed. Add chocolate chips to taste. Preheat oven to 350 degrees and bake 10-12 minutes.
